RECIPE
1 cornish hen cut and washed. Keep aside.
Wagaar / Braise the following
In a pot heat a ¼ cup oil & ¼ ghee (Clarified butter). Add 2 onions chopped2 teaspoon whole jeera seedsFew cinnamon sticksFew Elachi (cardomom) podsFew peppercorns
Wagaar / Braise until onions are golden brown. In the oil mixture add 1 1 / 2 teaspoon of packo roasted masala and braise for 6 seconds. Then add your chicken.
To this add 2 teaspoon salt or more 3 teaspoon dana jeera powder2 teaspoon crushed dana 1 teaspoon arad (Turmeric) 2 teaspoon mix masala ( I use chohans mix masala)3 teaspoon red garlic & ginger
Mix well & add water to cook until half way done. Because this is a tough chicken u have to cook 4 long and kip on adding water. When half way soft then add bout 4 grated tomatoes and some green peas and cook for little while. Then add potatoes and curry leaves. Cook til soft garnish with fresh chopped green danya. Serve with rice and salad.
INFO & TIPS
This curry can be made with normal soft chicken or mutton.
This curry also goes down nicely with some sweet curry pumpkin on the side & king soup ( raaso or kata paani)
