INGREDIENTS
125g butter
1 cup sugar
3 eggs
1 ¾ cups flour
2 teaspoons baking powder
Pinch of salt
1 teaspoon vanilla essence
½ cup fresh cream mixed with 2 tablespoons milk OR 2/3 cup buttermilk
1-2 teaspoons cocoa powder mixed in a little water
Pink food colouring
METHOD
Beat butter and sugar until light and fluffy. Add in the eggs, one at a time beating well after each addition. Mix in the vanilla essence. Add in the flour, baking powder and salt and then the fresh cream/buttermilk. Mix well until smooth. Divide dough into 3 dishes: leave one plain, add cocoa powder mixture into the another one and pink food colouring into the other. Drop spoonfuls of each batter into a greased cake pan and bake on 180 degrees for about 40-50 minutes. Dust with icing sugar once cake is cooled.
