INGREDIENTS
250g softened butter
100ml strong black coffee
280g self raising flour
250g caster sugar
½ teaspoon baking powder
4 eggs
1 teaspoon vanilla extract
85g walnuts pieces,chopped
METHOD
Heat oven to 180c /160c fan/ gas 4. Butter the cake tin or tins and line with baking parchment. Set aside 1 tablespoon of the coffee for the filling. Beat the butter, flour, sugar, baking powder,, vanilla and half the remaining coffee in a large bowl with an electric whisk until free of lumps and bumps. Fold in the finely chopped walnuts, then fill the tin with cake batter and bake the cake for 25/30 minutes until golden and cooked. Pour remainder coffee over cake. Enjoy!!
