Baked Salad Stuffed Sweet Potato

RECIPE

4 sweet potatoes wash, pierce and bake in oven till soft
Make salad (lettuce, tomato, cucumber, feta, pepper, pineapple, onion and chillies)
-Slit soft sweet potatoes down the cente and spread open-season with salt and pepper and a slice of garlic butter -stuff salad and drizzle with salad dressing and slivered almonds and cashews

INFO & TIPS

Serve with grilled chicken on the side or make a chicken filling and stuff the sweet potato with chicken and then salad.
