Meringue
3 egg whites
1 cup castor sugar
1 teaspoon vanilla extract
1 teaspoon baking powder
½ cup Pecan Nuts chopped
½ cup dates chopped
8-12 salty crack
Beat egg whites stiff, gradually add sugar, beat until glossy.
Add vanilla, baking powder, nuts, dates and crackers. Fold in.
Grease a baking tray, spoon dollops of meringue.
Bake on 170°c for 30-35 minutes.
250ml fresh cream whipped
Pipe little cream into individual cups, add few meringue pieces pipe more cream over..

Decorate with fresh fruit
Strawberry, kiwi, banana, berries, grapes
Drizzle chocolate over
