INGREDIENTS
Full leg
Marinade :
1 tablespoon garlic
1 teaspoon ginger
1 teaspoon red masala
2 tablespoon Robertson BBQ spice
1 tablespoon steak and chops spice
1 teaspoon black pepper
1 teaspoon garlic and herb
1 teaspoon crushed red chillies
1 ½ teaspoon dhana powder / crushes dhana
½ teaspoon whole jeera seeds
Salt to taste
1 tablespoon vinegar
1 tablespoon Worcester sauce
Sauce :
2 tablespoon steers peri
2 tablespoon tomato sauce
1 teaspoon mustard sauce
2 tubal steers garlic sauce
1 tablespoon steers BBQ sauce
1 teaspoon lemon juice
METHOD
Marinade leg over night for flavor to sink in with all the spices .
Add the leg into a pressure cooker with some water and give it 4 to 5 whistles ( if you don't have a pressure cooker , cook in a large pot until soft and tender ) add water if necessary .
Do this 30 minutes before serving .
In a huge Pyrex dish add the cooked leg pouring all the sauce over the leg , add some blobs of butter and let in cook in a preheated oven until the sauce starts to simmer .
