✔Vegetable pickle in Syrup adapted from Simply Food.. Syrup: 2 cups vinegar ¼ cup salt 3 cups sugar 1 tablespoon whole Jeeru (Cumin) 1 tablespoon crushed Jeeru (Cumin) Mix together and leave overnight so that sugar dissolves.
6-8 lemons ¼ cup sugar ¼ cup salt Enough boiling water to cover the lemons. Scrub the lemons thoroughly using a vegetable brush, rinse well.Place lemons in a large pot with sufficient boiling water to cover the lemons, the water should be at a full boil when adding the lemons. Add in sugar and salt ❗Allow the lemons to boil for 15 minutes only, lemons will taste extremely bitter if cooked any longer. Drain lemons and allow to cool. Cut the lemons into slices (retain all the juices, but remove pips ). Add in: ½ kg green mangoes (peeled and sliced) 1 green pepper 1 red pepper 1 yellow pepper cut into thick slices or chunks 3-4 Carrots cut into rings pour the syrup over the veggies. Mix well and allow to stand for 1 week before eating During the week, stir pickle at least once a day.
