INGREDIENTS
1 kg prawns
Salt to taste
2 teaspoons peri peri spice
1 teaspoons chilli paste
3 teaspoons garlic paste
2 tablespoons crushed garlic
1 teaspoon black pepper
1 teaspoon mild/hot chilli powder
30g butter
1 tablespoon lemon juice
3 tablespoons peri peri oil
½ cup mayonnaise
½ cup perinaise
METHOD
1. In a sauce bin make a sauce with the black pepper, chilli powder,butter, 2 tablespoons peri peri oil, mayonnaise, perinaise.Use a low heat.
2. Make a paste with with 1 tablespoon peri peri oil,peri peri spice,garlic paste ,chilli paste and crushed garlic and rub onto butterflyed prawns.Grill prawns in oven.
3. Pour warm sauce over prawns when cooked.
INFO & TIPS
1. Chilli powder can be added according to taste.
2. Cream may be added to taste if desired.
