RECIPE
150g box Woolworths caramelized onion squares½ tub Lancewood creme fraiche1 tablespoon Crosse & Blackwell Trim (light mayonnaise)½ teaspoon freshly ground black pepper½ teaspoon garlic salt1 teaspoon rough red chilliesDash lemon juice1 teaspoon Robertson's veggie spice½ tray baby zucchini½ punnet baby plum tomatoes
Method:Mix creme fraiche with all spices and trim.Spoon onto squares.Then using a vegetable peeler, peel lengthwise slices of zucchini. Place in microwave bowl with ¼ cup water and cook for a minute. Slice tomatoes in quarters.Roll zucchini slices in rosettes and arrange with tomatoes on squares.Place in fridge to chill and serve.
