Credit: my daughter Ridhwaana Moolla makes +- 18 eclairs puffs For The Dough 1 cup water125 g butter1 cup cake flour1 teaspoon sugarPInch of salt1 teaspoon vanilla Bring water butter salt sugarAnd vanilla to boilGradually add the flour mix well cook till the ball of dough moves away from sides of pot remove and put in your mixer bowlLeave to cool Once cooled ...Now add (Using 4 large eggs )you add 1 egg beat well continue adding the eggs 1 by 1 and beat after each addition until all 4 are used up. Beat till dough is like smooth soft and fluffy. Place wax wrap or grease proof paper on baking tray spray and cookAdd 1 teaspoon FULL dough lumps like rounds on paper Preheat oven at 200* Bake in oven for 15 minutes at 200*Then drop the heat to 180*Bake further 15 minutesPoke each round puff with a skewer to release the steam Switch off oven but keep the eclairs in the oven for 30 minutes till it cools down and is crispy and tops are a bit hardCut the puffs cases with knife to fill.. Fill with filling below: For the filling250 ml fresh cream add 4 tablespoon icing sugarsMix then whip the cream well For toppingDust icing sugar again on top of puffsAnd drizzle or pipe melted chocolate over the puffsDust with sparkling dust Enjoy..
