Vegetable karhai 🌶 Shared by Fathima R - Cooking With Class Picture credit: Fatima A Latif @_fatimalatif_ 🥕 Adapted and made by my sweet Mom Shaida Latib 🥔 4 tablespoons oil 2 onions finely chopped 2 teaspoons ginger garlic 1 teaspoon chilli garlic masala 1 teaspoon dhana (coriander powder) 1 teaspoon jiro (cumin powder) 1 teaspoon red chili powder 1 teaspoon salt ½ teaspoon turmeric 4 teaspoons Shaan Veg masala ½ teaspoon garam masala 2 med tomatoes chopped 🍆 1 cup chopped green beans 2 sliced carrots 2 cubed potatoes 1 brinjal cubed Red, green & yellow pepper cubed Baby marrows cut Patty pans cut in ½ 🍅 Method: Heat oil and fry onions until gold. Add ginger garlic and spices and cook for a few minutes. Add tomatoes then cook for 2 minutes. Wash all veggies and add to your onion tomato vagaar. Add water and cook on high heat for about 6 minutes then cook on low heat and cook till veggies are tender. The above can be made with veggies of your choice. Garnish with freshly chopped coriander leaves💖 Serve with hot naan/rotis.
