INGREDIENTS
Chocolate peppermint biscuits

125grams butter
¾ cup castor sugar
1 large egg
1 cup dessicated coconut
1 teaspoon vanilla essence
½ teaspoon baking powder
2 Tblspns cocoa powder
1 ½ cups flour
Preheat oven to 170
Beat butter and castor sugar
Then add egg,coconut,vanilla essence and mix well
Then add in the dry ingredients to form dough
Press into a greased pan +- 30cm x 29cm
Bake at 170 for +- 20 minutes till firm
Cut into squares
Spread melted chocolate and decorate with grated peppermint crisp
VARIATIONS:
make a softer dough using less flour
Roll out the dough 1cm thick/scrape with a fork/cut out shapes and bake ...decorate as desired
Nozzle out the dough and decorate as desired
