INGREDIENTS Cut up 4 potatoes into wedges (remove peel ) lemon juice Pyrex cling wrap
1⁄4 cup semolina 2 tablespoon flour salt Freshly cracked black pepper Dried mixed herbs Ina parmans chilli garlic spice
Oil to shallow fry
METHOD Place cut wedges into a Pyrex dish. Cover Pyrex with cling wrap completely. Place this in the microwave for 6minutes. Remove from microwave and remove cling wrap. Add about 3 tablespoon lemon juice to potatoes and toss.
In the meantime mix together the semolina and all the spices.
Take 1 wedge at a time and coat in semolina mix Repeat until all done. Heat up oil in a pan. Place potatoes in the oil and allow this to crisp all sides. Remove and serve.
