Beat for 3 to 4 minutes.I use a stand mixer.To ensure proper mixing beat cake batter on low until ingredients have just combined. Overmixing results in tunelling. DONT walk away from the mixer.

I think the tunnels are because of eggs and sugar that are beaten till light,thick and fluffy.How long must eggs and sugar be beaten? With a hand mixer or a stand mixer? On high or a low setting?
