Note: Chopped onion can be omitted entirely
For the Red Masala Paste you will need:
Makes about 250 g of Paste
150 g Red Dry Chilli
100 g Fresh Red Chilli
1 Red Bell Pepper, chopped
1 medium onion, chopped
15 Cloves Garlic
2 knobs Ginger
2 Tbsp freshly chopped coriander
30 ml oil
Salt to taste
Method:
Combine all the above in a blender or food processor and blitz until a thick paste prevails
Stores great in the fridge for + - 3 weeks
For a longer fridge life (add more oil)
Can be prepared in large batches and stored in your freezer
For the Green Masala Paste:
1 Large bunch Coriander
150 g Fresh Green Chilli / to taste (depending on how hot your chilli is)
1 sprig Curry Leave
1 Green Bell Pepper, chopped
1 medium onion, chopped
15 Cloves Garlic
2 knobs Ginger
½ tsp toasted Cumin (whole) seeds
Salt to taste
About 30 ml Oil
Method:
Combine all the above in a blender or food processor and blitz until a thick paste prevails
Stores great in the fridge for + - 3 weeks
For a longer fridge life (add more oil)
Can be prepared in large batches and stored in your freezer
