Carrot Cake
Tried this recipe as a cuppies and it came out good. Made 18 small-medium sized cupcakes. Baked for about 15mins on 180*c. Was a bit concerned when baking, as the mixture was really stiff (almost like a biscuit dough), but once carrot was added and mixed a bit, it became more liquid. Really delightful recipe. Thnks Indira :) PS: I added chopped pecan nuts.
