Orange Pepper Spiced Chicken
@Leila - I cheat and smoke the sauce. βΊοΈ
Heat a pot lined with foil on the stove - heat on medium to high. The base of the frying pan that you will be using to make your sauce must fit on this pot nicely so no open gaps. Heat a piece of charcoal and wrap it in foil. Put this in the heated pot and put a piece of ghee or butter on it. Take the frying pan and put it on top of the pot and make the sauce as per the recipe.
Alternatively, when I am in a hurry, I just make the sauce in the pan without the charcoal. Put the pan on high so after putting the oil, butter, garlic, lemon juice and orange pepper spice, it literally smokes when on high but be careful not to burn. You will get a smokey taste but not charcoal. It still tastes divine and is quicker.
