Mexican Tortilla Soup
Absolutely delish. I simply fried pur instead of using tortilla strips etc. Served with bowls of chopped red onion (washed in salt), lemon (note that the soup is already tangy from the veg broth, so check first bef squeezing in), fried chopped chilies in olive oil with salt, coriander. Tip: dont add salt as the soup is already seasoned due to broth and canned tomatoes. Add more red beans. Its wonderful.
