Hi Anisha, the 3 tbl oil is for the carrots, you add it in with the spices. For the vagaar, you can add just enough to cover the mustard seeds.
hi Please clarify if the 3 tablespoon oil in the ingredient list must be used to make the vagaar or is it separate oil from the vagaar? if separate oil when must it be added to the carrots and how much oil must be heated for the vagaar? Thank you. Anisha

Wslm, red masala is a mixture of red chillies, ginger & garlic which makes it easier for cooking indian food because most dishes require those ingredients. It's usually best to make a whole lot & store in the freezer & just use whenever you require instead of adding seperately. 'Green masala' is a mixture of green chillies & garlic.
